Crust ingredients:
1 cup butter
2 cups flour
2 tablespoons sugar
Preparation:
Mix and pat into a 9x13 inch pan and bake at 350°F for 10 minutes.
Filling ingredients:
5-6 cups rhubarb, cut fine
6 egg yolks
2 cups sugar
4 tablespoons flour
1 cup cream
1/4 teaspoon salt
Preparation:
Mix and pour over baked crust.
Bake at 350°F for 45 minutes.
Topping ingredients:
6 egg whites
3/4 cup sugar
2 teaspoons vanilla
Preparation:
Beat egg whites until stiff.
Add sugar and vanilla.
Spread over the baked custard filling.
Bake at 350°F until light brown, about 10-15 minutes.
